Breakfast can be tough for many reasons. Lets face it – cereal is just easy, right? Well what if you knew that you could eat healthy every morning without pulling your hair out? With some planning, you can easily set your family up for the week and they will think Mrs. Cleaver came to town! Sunday afternoons/nights are usually my meal prepping time for the week. Setting this time aside to prepare the week keeps the busy weekday just grab-n-go during those crunch times. This way I can be the happy, un-stressed mom my kids love. Here are some ideas to make for breakfast option that you can either prepare the night before, make on your meal prep day or whip up a shake in 2 minutes.
Shakes
Egg Omelet Cups
Gingerbread Chia Pudding (I recommend using an unsweetened, non-dairy milk or a raw milk)
Quinoa Egg Bake with Thyme and Garlic (I recommend using an unsweetened, non-dairy milk or a raw milk)
Grain-Free Waffles
Coconut Flake “Cereal”
Sprouted Rolled Oats (as an oatmeal alternative with no soaking necessary)
Oatmeal (using soaked oats, rec: Bob’s Red Mill Gluten Free Rolled Oats)
